Tropical Banana Bread

Gavin loves sweet breads - banana, pumpkin, raisin - you name it! I made a Tropical Banana Bread to have for breakfast the next couple days.



Tropical Banana Bread

1 3/4 Cup whole wheat pastry flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1/2 tsp nutmeg
1 Tbsp flax seeds
2 medium bananas, chopped
2 Tbsp coconut oil, melted
1/2 Cup raw cane sugar
1/2 Cup shredded coconut and more for garnish 
1 Cup milk
1 Cup strawberries, chopped
Brown sugar for garnish


Combine four, baking soda, baking powder, sea salt, nutmeg and flax seeds in a bowl. In a separate bowl combine bananas, coconut oil, sugar and shredded coconut. Add to flour mixture. Slowly stir in milk, stirring until moist. Pour batter into prepared loaf pan. Disperse chopped strawberries by hand evenly on top of batter. Garnish with shredded coconut and brown sugar. Bake at 325 degrees for approximately 60-65 minutes. Allow to cool before removing from pan.
