Ingredients
2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1 cup butter, softened
1 1/2 cups natural cane sugar
1 egg
1/2 teaspoon vanilla extract
Juice of one lime
½ cup shredded coconut
1/2 cup natural cane sugar for rolling cookies

1. Preheat oven to 350 degrees
2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
3. In a separate large bowl beat together the butter and sugar until smooth
4.Stir in egg, vanilla extract, and lime juice, stirring thoroughly between ingredients
5. Gradually stir in the dry ingredients and shredded coconut
6. Roll teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.
7. Bake 10 minutes in the preheated oven
