Golden Apple & Cranberry Pancakes

1 Golden Delicious apple, chopped
1/4 C chopped cranberries
1/4 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp vanilla
2 C flour
1/4 C sugar
2 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
2 C milk
1/4 C melted butter

Combine first 5 ingredients in a small bowl and set aside. Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Beat the eggs with milk and melted butter in a measuring cup. Combine the wet and dry ingredients into a lumpy batter and add apple mixture; be careful not to overmix as this will result in flat, heavy pancakes.

Heat a little bit of butter in a skillet or griddle over medium heat. Spoon 1/4 C of batter into skillet. Cook 2-3 minutes on each side or when bubbles form around edge of pancake. 

Serve with maple syrup or apple butter.
