Strawberry Popover Pancake


I made this delicious recipe this morning, which I adapted from a Gooseberry Patch recipe. It is so easy! The variations are endless - you could use spelt flour, brown rice flour, etc. Or garnish with a whipped topping.

Ingredients
2 T butter
1/2 C flour
1/2 C milk
2 eggs
1/4 C chocolate chips
1/4 C raw cane sugar
1 pt. strawberries, sliced

Garnish: confectioners sugar


Place butter in a 9 inch pie plate; place in 200 degree oven until butter is melted. In a medium bowl, beat flour, milk and eggs until well blended. Pour mixture over melted butter; do not stir. Drop chocolate chips evenly over flour mixture. Bake at 400 degrees for 20-25 minutes or until edges of pancake are puffed and a deep golden brown. In a small bowl, sprinkle raw sugar on strawberries and spoon into center of pancake; cut into wedges. Garnish with confectioners sugar.
